The Vignes a la Francaise of Bollinger are two tiny plots of land which have miraculously resisted to phylloxera. These non-grafted, layered and self-regenerating vines are cultivated under the ancient provignage technique. The Vielle Vignes Francaises made from these unique vines is a blanc de noirs (100% Pinot Noir), produced in minuscule quantities, the mission of which is to maintain a tradition which has disappeared with the era of modern viticulture. Very pale colour. Seaweed nose when you smell it on a beach. So 'sweet'. So gentle, it dances on the palate.
