Rather than running off the fresh pressed juice and fermenting only that, we crushed the grapes then put everything into the tank, skins and all and let it do its thing.A super small run, initially as an experiment and now onto a second vintage the Amber Savvy us sees a touch of air during the winemaking process. Giving it a nuttier, dried orange peel richness. Great with almost any cheese its an interesting wine. The wine is racked on a moon day, not filtered, fined and with minimal So2 at bottling.
