Delatite Estate Gewurztraminer Dead Man’s Hill 750mLOur Gewurz was harvested from late March through to mid April. The fruit was hand picked and then whole bunch pressed with a touch of skin contact to draw a little more flavour from the skins. The resulting juice was then allowed to undergo a wild ferment with a small proportion (12%) fermenting in large old oak vessels. Finally the wine was blended and given a minimal filtration before bottling. No fining agents* were used in the making of this wine.
