Outlawed in 1661 by King Charles, Poitin production was forced into the wilderness where it enjoyed an illicit romanticism as Ireland’s notorious Moonshine. Aged for 6 months in virgin Irish oak and a further 6 months in Sherry casks, the result is a smooth but complex mix of malted barley sugars and toasty, wooded flavours.
