Caol Ila (pronounced ‘culleela’) is definitely a seaside distillery as the ferry terminal is almost beside it. The whisky, distilled in 2001 has aromas of cured meat, green apple, pineapple and vanilla. Underlying hints of menthol and peat smoke develop. The palate is sweet with cracked black pepper initially. Lemon, lime and ripe banana flavours combine with a lingering hint of bonfire embers. Eventually becomes creamy and a delicate peat smoke edge on the finish.
