The Grapesfor this wine were sourced from the home vineyard in Wonga Park, and a second vineyard located in the high northern ranges close to St. Andrews. 2017 was an almost perfect growing and ripening season; there were very few heat spikes and adequate rainfall occurred at the right times. A classic Yarra Valley vintage of yesteryear. The grapes were handpicked and once in the winery grapes were either fermented traditionally (destemmed) oras 100% whole bunch/carbonique with regular punch downs and pump overs. Different winemaking techniques are employed to allow a broad range of blending options which encourages a multifaceted, complex wine. After pressing, the wine was run to barrel for 8 months, with rack and returns conducted as necessary during this time. 15% of the blend saw new French oak, and a variety of Cooperages were used to further add complexity. The wine was blended to tank on light lees in December 2017 and then was bottled in February 2018 without filtration. The colour is a vivid ruby. Lifted fruit tones of blueberry and raspberry are apparent. Cool-climate Shiraz notes of white pepper and violets peak through. The palate shows further aromas of blueberry, raspberry and Morello cherry. Abundant white pepper tones with oak-mahogany tones give way to choc-plumb Christmas pudding notes. The wine is medium bodied and the tannin profile is chalky. The wine will continue to flesh out over the next 3 -5 years and will reward careful cellaring past this mark. 13.0% alc 440 dozen bottles produced.
