Singlefile Great Southern Cabernet Sauvignon Merlot 750mLThis wine is a blend of 60% cabernet sauvignon, 25% merlot and 15% malbec, the malbec not mentioned on the front label given the quantity offered in the blend has varied from 0% to 15%. The fruit was picked and sorted in mid April 2018. It was cold soaked in small fermenters for twelve days before undergoing an extended and gentle maceration allowing for the softening of the tannins. Thirty percent of the wine was matured in new Bordeaux oak barriques. The balance went to one year old (50%) and two year old (20%) Bordeaux barriques for thirteen months maturation before final blending and bottling in August 2019.
