A blend of estate-grown, single-vineyard Chardonnay (70%) & Pinot Noir (30%). The fruit comes from a mix of two terroirs: grey gravelly loams over clay and red loam over gravel. At the time of harvest the vineyards were organically managed, in conversion to biodynamic certification. The base wines go through 100% malolactic conversion and the wine is according to the méthode traditionnelle. Pale straw with green-gold highlights. Excellent creamy mousse with persistent fine bead. Attractive toasty/pastry aromas with brioche and mushroom nuances. Wonderfully smooth, regal palate; great presence, with ripe vintage Pinot Noir influences balanced by freshing/tangy natural acidity and our vineyard's citrussy Chardonnay character. Despite the absence of oak in its winemaking, the wine is round, multi-layered and well-textured. Terrific persistence of flavour. Match with crab or pork dumplings; Chinese spring rolls or whole barbecued lobster. Limited stock, available at select stores.
