The Tumu Pinot Gris is predominantly made from Hawke's Bay fruit from two different subregions within the province. Havelock North subregion is where vineyard soils are more gravel loams and river terraces with silt. This subregion produces grapes that are generally riper with a flavour profile that exhibits pear and red apple. Grapes from the Pakowhai subregion have much richer soils; the grapes are therefore picked earlier to display more citrus and floral characters combined with more acidity. The result is a luscious fruit flavour and the Pakowhai fruit finishes the wine to give beautiful acidity and balance.
