Limited Release – 1500 cartons produced. Single vineyard fruit was de-stemmed and lightly crushed to maintain whole-berry components. Fermented with wild yeast in shallow open-top oak casks with twice daily pigeage to facilitate skin contact over 12 days before a period of extended maceration before gravity fed into an old basket press. Free-run was directed into French and American oak hogsheads with component of pressings back blended to achieve desired balance and structure. Natural clarification achieved through maturation so no fining or filtering was needed prior to bottling.
