Sitting high in the Gold Coast hinterland at Mount Tambourine is Witches Falls winery. It’s doing a couple of funk things, one of which is this wild ferment sav blanc. This is quite a rounded, subtly oaked, almost generous style of savvy showing aromas of lemons, mowed grass, dairy and a touch of toast on the nose, and pretty much the same on the palate, along with some creaminess to the texture. The finish is smooth, bright and citrusy which would see it match well with pork or poultry dishes.
