Since then we have built up what we believe is one of the largest barrel ageing programmes of any brewery in the Southern Hemisphere. Here we produce many different sour beers, some traditional, some not. This is our highly rated Imperial Stout, iStout, aged for 3 years in Pinot Noir barrels with added brettanomyces. Roast and boozy as the original but also funky, dry, wild and unchained.
