Bakayaro means idiot or moron in Japanese. The concept and the naming of this insolent brew were the brainchild of former home brewer and current director of brewery operations, Chris Poel. The beer is pungently hoppy and wickedly strong. We bump up the alcohol without rendering the body too heavy by using substantial amounts of Japanese dark cane sugar. We hop heavily during the kettle boil with several varieties of boldly flavourful American and international hops and we recombine them in a triple dosing of dry hops after primary fermentation is complete. We krausen at packaging in order to add further flavour complexity and to produce a piquant but soft all-natural carbonation.
