Delatite Chardonnay 750mLPicked in early March the fruit for this wine was handpicked from our Winery block. It was whole bunch pressed and cold settled to give a roughly clarified juice and then racked to a mixture of one year old barrels which were mostly of French oak. The juice then went through a 100% wild ferment. The resulting wine was matured in oak and then bottled with a minimum of filtration and no use of fining agents.
